Pear, Bacon and Brie Wontons

- 2 Packham’s Triumph pears, peeled, cored and finely diced
- 100 g firm brie, cut into fine dice
- 4 rashes lean bacon, rind removed and finely diced
- 2 tablespoons finely chopped chives
- 30 egg wonton wrappers
- Vegetable oil for frying
- ¼ cup plum sauce
- ¼ sweet chilli sauce
- Squeeze lime juice
In a bowl mix together the prepared pears, brie, bacon and chives.
Take one wonton wrapper and place a small amount of the mixture onto the wrapper.
Using a pastry brush dipped in water, brush the edges of the wonton and pull together to form a bag making sure it has sealed well.
Place the prepared wontons on a tray and when all the wontons are made, cover with plastic wrap and store in the refrigerator ready to fry and serve.
When ready to cook, heat some vegetable oil in the wok and gently place several wontons into the hot oil, cook till golden and crisp.
Mix together the plum sauce, sweet chilli sauce and lime juice to taste.
Serve the cooked wontons beside the dipping sauce.
