Pear and Super Grain Salad

Ingredients

    Dressing

  • 2 tablespoon malt vinegar
  • 1 tablespoons Evoo olive oil
  • 1 teaspoon Dijon
  • 1 tablespoon lemon juice
  • 2 teaspoons onion powder
    • Salad

    • 2 Pears, sliced, cored
    • ½ cup cooked quinoa
    • 90 g marinated feta, crumbled
    • 120g packet pomegranate seeds
    • 200g mixed leaves

Method

Dressing

Whisk all dressing ingredients in a jug, set aside

Salad

In a large mixing bowl, combine all ingredients

Drizzle with dressing and mix to combine
